Despite calling Chicago home for years, the wine bug bit: we took the plunge and moved to California so that we could continue to refine our winemaking skills first-hand. Burgundian varietals have been from the start a source of love and interest, and consequently was a natural focus. We now make our home near Freestone, CA centrally located amidst our prime vineyard sources, at the Werstern edge of the Russian River Valley - an area which we believe yields the finest expression of Pinot and Chardonnay varietals.
We continue to grow our vineyard sources with each vintage, with increasing emphasis on estate fruit and organic practices, allowing for an ever-increasing diversity of single-vineyard wines, and ever increasing the quality of our Dichotomy appellation wines.
Our Winemaking Approach
Focusing on small lot fermentations, followed by customized barrel selection and aging protocol, allows us to take more risks while yielding the purest possible expression from each bin of fruit. We use multiple clonal selections of both Pinot Noir and Chardonnay, and believe each requires special treatment to extract the maximum character from the beautiful vineyards we source from. In short, we believe our grapes respond best to extreme micro-managing (unlike our Winemaker Brooks).
Far more important, in our belief, is the origin and quality of ingredients. We source the majority of our fruit from famed vineyard manager Ulises Valdez, who works with us to select, nurture, and harvest specific blocks based on our approach and style. Time and again the result has been a testament to the payoff of working with the best of the best.
Like anything in life, there is an eternal learning process inherent in wine – every discovery prompts a question, every swirl presents an opportunity – but it’s a journey we love to take with every bottle we open and every wine we make.
